We are seeking an experienced Kitchen Manager/Executive Sous Chef to join the team at the Isle Casino Hotel in Black Hawk, CO

The Kitchen Manager/Executive Sous Chef is responsible for supervision and coordination of activities concerning all back-of-the house operations and personnel, including food preparation, kitchen and storage areas.

SPECIFIC DUTIES AND RESPONSIBILITIES
• Develops and manages the budget for back-of-the house operations.
• Ensures the safety and security of employees and customers. Manages, programs, and processes to control and reduce loss time injuries.
• Review staffing levels to maintain full employment. Delegate authority and assign responsibilities.
• Development of staff, interviews, hires, trains and evaluate back-of-the house personnel.
• Review and manage departmental financial data, purchases or requisitions, food items, supplies and equipment.
• Reviews back-of-the house activities with Restaurant Manager. Plans or participates in menu planning and food production and apportions meats, vegetables, and desserts as well as food surpluses to control food costs.
• Ensure food adheres to standards of quality. Maintain cleanliness of kitchen and equipment. May meet with clients, departmental directors and managers as necessary, to plan special menus.
• Other duties as assigned.


Being bilingual is helpful but not a necessity.

• Five to seven years experience restaurant management, inventory control, and purchasing with a 4-year degree in related fields or equivalent work experience.
• Fine dining and high volume experience preferred.
• Must be able to maintain a pleasant, friendly and welcoming attitude at all times.
• Must be able to obtain and hold a valid Gaming license and an Alcoholic Beverage Control (TIPS) card.
