Department Information

The University of Northern Colorado is located in Greeley, Colorado, population over 100,000, an hour's drive north of Denver, and within driving distance of the Rocky Mountains.   • Prepare food, hot and cold, according to computerized menus and production sheets.
  • Prepare prep items from prep list such as produce, vegetables, fruits, cottage cheese, yogurt, and other food items.
  • Label and date prepared food.
  • Measure and weigh food ingredients and understand proper use of cooking technology in order to prepare ingredients as specified by the recipe.
  • Communicate with co-workers and lead cooks about items that are prepared and items they would like you to prepare.
  • Prepare food according to methods taught in Culinary Objectives.
  • Operate kitchen tools and equipment.
  • Be able to clean and sanitize equipment properly to avoid cross contamination.
  • Clean and sanitize work surfaces, floors, and storage areas.
  • Actively participates with additional cleaning tasks and during designated cleaning periods following cleaning duty list.
  • Maintain up-to-date, valid ServSafe Certification by taking 8 hour test every 5 years.
  • Participate in the daily cleaning task list and bi-yearly deep cleaning.
  • Report to work as scheduled daily, follow scheduled meal and rest breaks.
  • Practice good kitchen safety, good housekeeping, and good personal hygiene in adherence to UNC Dining Policy.
  • Wear the proper uniform: black no-slip shoes, chef coat with a white tee-shirt underneath, black pants and UNC ball cap.
  • Wear gloves at all times and change gloves when changing tasks.
  • Follow Dining Services policy and use the appropriate beverage cup when working in the kitchen.
  • No beverages are allowed in serving areas.
  • Employee needs to be flexible with their assigned schedule and work location which may vary according to department needs during the fiscal year.
  • Requests for vacation time or personal time must be submitted no later than one week prior to the time off.
  • Set up food items on serving stations; garnish and maintain proper temperatures.
  • Keep serving and cooking areas stocked with food products throughout meal periods until 10 minutes past closing time.
  • Remove food items, record amounts of food items consumed during that meal, and record on production sheets, date, label, and store overproduced food items in salad walk-in.
  • Use a calculator to figure servings on production sheets.
  • Practice proper shelf storage for all products including meats, dairy, produce, raw foods, and prepared foods.
  • Practice the FIFO system.
  • Follow safety & sanitation procedures when cooling down all leftover food items.
  • Know and understand allergy concerns and be able to identify products that may cause an allergic reaction.
  • Communication to line server, setting out appropriate allergy signage, and following the proper steps to reporting allergic reactions to management.
  • Other duties as assigned by supervisor.

Six months of experience in an occupational field related to the work assigned to the position.
